National Spinach Day (26th March 2020)

Getting your children to eat healthily is difficult… we all know the struggle! And to be honest, who wouldn’t rather eat a Jaffa Cake over an apple? You can hardly blame them! But that’s about to change as National Spinach Day (26/03/2020) is just around the corner. Sorry kids, it’s a rule, everyone just HAS to eat spinach on National Spinach Day… it’s just like pancake day!

Don’t worry parents, to make this battle a little bit easier for you, we’ve put together some fantastic spinach-based recipes that we’re sure you kids will love!


Easy Cheesey Pita Pizza

INGREDIENTS:

6 wholewheat pita pockets

3 tablespoons olive oil

1 cup fresh spinach

½ cup mozzarella cheese

Salt & pepper

½ teaspoon garlic powder


INSTRUCTIONS:

  1. Preheat the oven to a medium heat.

  2. Cook the spinach in the microwave: Put spinach in a microwavable bowl, add a tablespoon of water and cook for about 1 minute. There shouldn’t be any leftover water, but if there is, carefully drain it off.

  3. Meanwhile, brush both sides of the pitas with olive oil, arrange on a baking tray and cook in the oven for 1 minute. Then remove.

  4. Flip the pitas over and sprinkle lightly with salt & pepper. Add the spinach, garlic powder and top with cheese!

  5. Cook again for about 2 minutes. Keep your eyes on them because they’ll burn quickly!

  6. Let them cool for a few minutes then enjoy!


Super Spinach Cupcakes

INGREDIENTS:

½ cup applesauce

2 eggs

2 teaspoons vanilla extract

1 cup fresh spinach leaves

½ cup sugar

2 tablespoons olive oil

1.5 cups whole wheat flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt


INSTRUCTIONS:

  1. Preheat the oven to 180 degrees

  2. Prepare a mini muffin tray with liners, butter or non-stick spray.

  3. Combine applesauce, eggs, vanilla, spinach and oil in a blender or food processor until you only see flecks of spinach.

  4. Add the flour, baking powder, soda and salt, then mix thoroughly.

  5. Fill each cup ⅔ full and bake for about 12 minutes. The tops should be spongy.

  6. Cool on a rack and then enjoy!




Spinach & Pineapple Popsicles

INGREDIENTS:

1 cup fresh spinach

1 very ripe banana

½ cup milk (any type will do)

1 cup pineapple chunks


INSTRUCTIONS

  1. Put all ingredients in a blender. Blend until a smooth liquid.

  2. Pour into popsicle moulds.

  3. Freeze.

  4. Enjoy!
